Our Favorite Kale recipe

With the amazing health benefits of kale, we try to get it into our diet on a regular basis.  Kale can be made into chips or added fresh to a fruit smoothie.  Below is the way my mom makes it* and it is so good even my 1 year old loves it.  Here's what you'll need:
Olive Oil, chopped onions (I use the pre-chopped frozen kind and I'll use 1/3-1/2 of the bag for this recipe), 2 bunches of organic kale, baby portobello mushrooms (one whole container), chicken broth (I use the Better than Bouillon chicken base) and black pepper (not pictured)

Saute chopped onion and mushrooms in Olive Oil (1-2 Tbsp)
Rinse each individual leaf of 2 bunches of kale, tear leaves off of stem all the way down and chop leaves...add to saute mixture.

It's going to fill your pot but quickly will "shrink" down...just keep stirring

Starting to smell really good now...and look at that beautiful bright green color!  This is where you're children might come in the kitchen to ask what smells so good and it's a great opportunity to tell them how good dark greens are for their growing bodies ; )
After liquid starts to evaporate off, add 3/4-1 cup of chicken broth.  This is what really gives it a good flavor and is basically your "salt" so add as much of the bouillon as you'd like according to your taste (making broth as concentrated as needed) but don't add too much water because you're going to allow all the water to evaporate off

Greens will get darker and more tender as they simmer on medium low to low heat....may take up to 45 minutes.  The wait is worth it!  You only need to stir a couple of times during this step.  It's ready when leaves are tender and taste somewhat sweet (that's how it tastes to me anyway).  Add freshly cracked black pepper and stir right before serving.  Best served hot and right away.  This is a great side dish with chicken and rice with mushroom sauce!

*You can also add cooked bacon crumbles if you'd like which is in my mom's original recipe.  We usually skip this step because it already has so much flavor.
Enjoy!
