Using up our eggs

A little update on the chickens. It has been a very educational and rewarding experience keeping chickens. We have learned so much already and continue to and...we have eggs coming out of our ears, or shall I say, our refrigerator :). We get 10-12 eggs everyday. That means we have to eat that much every single day or they begin to fill our fridge up to overflowing. The good news is that they keep for a long time (about a month) and they can be frozen in ice cube trays to use in recipes for a later time.
We have also been giving them away as gifts and making recipes that use a lot of eggs. For example, tonight's dinner is spinach and cheese
quiche (with lots more eggs than the recipe calls for). If you have a recipe that calls for more than 5 eggs, please share it with us!
We are very thankful for the opportunity to raise chickens. I'll tell ya though, it is a lot of work. Cleaning the manure out of the coop is no fun and I even lose sleep at night sometimes worrying about our chickens with thoughts like, "what if one of them gets sick?". Well, then we'd have to quarantine that one, care for it and hopefully it would get better or else. It would be unthinkable as we are not brave enough and too tender-hearted to put one of them "down" (or watch it suffer) at this point. And as the lady who sold us the chickens told us, you don't want to pay hundreds of dollars in vet bills for a $10 chicken.
So far, they seem to be doing well (thank you Lord!), we are getting a lot of eggs and we are learning a lot. All in all, it's been a great experience!
